You already know I like to keep cookies around the house, homemade if possible. I found a new recipe from ambitious kitchen for chewy chocolate chunk cookies that uses coconut oil. I recently bought two jars from Target on sale, so I am well stocked.
Her pictures show flat, gooey cookies. Mine were fluffy, cake-like cookies, perhaps because of the whole wheat white flour substitution. I sprinkled in a few coconut flakes, not as much as the recipe called for. I didn’t reduce the amount of sugar and I used regular brown sugar.
No word on whether the tot will eat these; he was too preoccuppied with Valentine’s Day goodies to need a cookie last night. But the adults in the house give a thumbs up!
